Negroni
The perfect balance of sweet and bitter, and highly aromatic. The sweetness comes from the Antica Formula Vermouth, while the bitterness is brought by the Campari’s signature blend of botanicals and fruits like chinotto and cascarilla. Gordons Gin is the balancing element here, although if preferred this can be swapped for rum.

Pina Colada
Set your status to ‘Away’ for this sweet and creamy cocktail that instantly makes you feel like you’re on the dreamiest of beach holidays (or getting caught in the rain). When it comes to the Pina Colada, we found our mojo with Koko Kanu Coconut Rum, pineapple juice, coconut cream and a hint of lemon juice to balance.

Cuban Daiquiri
A sharp and sour cocktail made perfectly balanced with lime juice, Havana 7 Dark Rum and Demerara Sugar. Popularised in Havana during America’s prohibition, the drink is a symbol of the warm hospitality only the best cocktail bars offer.

A refreshing cocktail we’ve designed with Sailor Jerry Spiced Rum – smooth, yet bursting with bold flavours. We pair it with the citrussy breeze of Briottet Blue Curacao Liqueur, fresh lime juice, white sugar and Stratford Sodas Hedgerow Mixer. Tropical vibes, but with a spicy depth – the perfect adventure.

Our play on a classic Pornstar Martini – less ‘London Lounge’, more ‘Cheltenham rum bar’. With Havana 3 White Rum, Passoa Passionfruit Liqueur, mango Juice, fresh lime juice and passion fruit syrup, get ready to admit there’s a new starlet in town.

Like that first strawberry of the season – sweet, fresh, and with a mouthwatering bite, this cocktail features Gin Sour made with strawberry syrup, lychee liqueur, Gordons Gin and fresh lemon juice summer dreamscape.

June bug
Everything you could want in a tropical cocktail. Lip-puckeringly sweet thanks to the Midori Melon Liqueur, banana liqueur, passionfruit syrup and pineapple juice, but almost perfectly balanced by Koko Kanu Coconut Rum – a real treat from Jamaica.

Old Fashioned
Old, yet never dated – this is a smooth blend that’s perfect for sipping and designed to be enjoyed until the last drop. We make it with El Dorado 8 Year Aged Rum, demerara syrup and aromatic bitters (can be adapted and made with whiskey or tequila).

Amaretto Sour
A sweet and sour cocktail made with Disaronno. Cointreau, lemon juice and white sugar bring a nuanced flavour palate, and it’s all tied together with a silky texture created by foaming bitters.

Mezcal Paloma
Smoky and sour with Mezcal Verde, El Jimador Tequila, fresh lime juice, agave syrup and pink grapefruit juice. The rim of this cocktail is coated with Tajín, which brings a spicy, piquant, sour, saltiness to each sip.

Circus Sour
A fruity twist on an Amaretto Sour cocktail with Sailor Jerry Spiced Rum, Disaronno, fresh lemon juice, white sugar and pineapple juice. A tantalizing fusion of spice, citrus, and an almondy sweetness.

Classic, boozy, sour – a favourite from the mid-century, and everyone’s ultimate tiki cocktail. We’d never interfere with a classic at work, but our Mai Tai is beautifully enhanced with Orgeat Almond Syrup, Appleton Signature Rum, Cointreau and lip-puckeringly tart lime juice.

That nostalgic sweetness of pineapple, balanced with just enough sour elements from the lemon juice and aromatic bitters. We couldn’t not make Hawksbill Pineapple Spiced Rum the star of this one, along with white sugar, pineapple juice, and foaming bitter for a silky texture on top.

For those of us who want our flavours strong, distinctive, and full-bodied. This is a classic cocktail, with our very own rum twist. Dead Man’s Fingers Coffee Rum brings that dark roast profile, along with caramel, molasses, and a creamy, lingering texture., Havana 7 Dark Rum enhances that dark richness, along with fresh espresso, demerara sugar and vanilla syrup.

A classic, and an unrivalled star of cocktail bars across the globe. At 33 Rum Bar, we craft our mojitos from Havana 3 White Rum, fresh mint, lime juice, demerara sugar and soda water. Deceptively simple, forever a favourite.

Zombie
A very strong, boozy but delicious classic made with Havana 7 Dark Rum, Sailor Jerry Spiced Rum, Cointreau, orange juice, fresh lime juice and a dash of grenadine. After that initial booziness, you’ll uncover enough flavours – from spicy to sweet – to fill a notebook.

Margarita
A sharp and sour cocktail of fresh lime juice, El Jimador White Tequila and Cointreau, perfectly balanced with sweet agave syrup. As refreshing as any palate cleanser, yet never lacking that celebratory flair.

A refreshing cocktail with Gordons Gin, lemon juice and white sugar, drizzled with Briottet Blackberry Liqueur. The botanicals in the gin paired with the succulent blackberry will make you nostalgic for the great British hedgerows of late, late summer. Don’t worry – Bramble goes down smoother!

Our own light and refreshing play on a classic French 75 with El Dorado 3 Year White Rum, fresh lemon juice, white sugar and aromatic bitters. After a hearty shake, it’s topped off with prosecco. Tart and sweet, but with those deep undertones only rum can bring to the table.
